Chicken Parmesan

We are serving an Italian tradition, Chicken Parmesan. This will be available as either a pasta dish or as a sandwich. These dishes are covered with our homemade, slow-simmered marinara.

We start this dish with chicken breast cutlets which are pounded out thin by hand and placed in Italian seasoned bread crumbs. The chicken is generously coated and then fried to a golden brown color. We choose a tender spaghetti to serve the chicken atop and then cover it with marinara and mozzarella. Thesandwich is served on a wheat hoagie roll and topped with marinara and mozzarella and baked. Both dishes are garnished with fresh parsley and a pinch of parmesan. The pasta is served with four breadsticks, and the sandwich is served with a choice a fries or chips.

Let’s Talk Bella Noche

When we gathered to discuss our specialty pizzas, I was firm that I wanted to do one that embodied an Italian phrase. I have always considered pizza a form of art, and I like the Italian word Bella. There was this Dean Martin song called Bella Notte from Lady and the Tramp. I thought it would make a great pizza name. We printed out our first run of menus, on a shoestring budget, and they misprinted Bella Notte. They printed it as Bella Noche. Notte is Italian for Night, Noche is Spanish for night. The name caught on, and we never bothered to correct it. Plus, the specialty pizza literally translates to beautiful night.


When orchestrating this pizza, we thought about the color combination. We wanted this pie to be visually arresting and physically satiating. We took our organic baby leaf spinach, fresh garlic and combined it with mozzarella, red onions, Roma tomatoes, artichoke hearts, and provolone cheese. This pizza surprises folks the first time they try it. Usually first by how pretty it is and then by how good it tastes. Whether its Notte or Noche, its always a great night when you eat this one!

"The Big Jason" - Our Best Italian Sausage Pizza

Growing up, I liked pizza a lot especially an italian sausage pizza. I was generally a pretty adventurous eater, and liked to try different things. I grew up in a small town, and we didn’t have the best choices in local pizza options. There was one that my family frequented, and they had some of the best sausage I had eaten on pizza. I learned early on that pairing it with fresh garlic was even better.


When I moved downtown to go to college, I found my first pizza by the slice joint. It was there that I added onion and bacon to the mix. I used these four toppings to judge pizza places after that. I could tell the quality of their ingredients from sampling pies this way. My children would make fun of me because that is all I would order when we would get pizza out. They coined the phrase “Big Jason” to describe my slices.


So, this pizza features Italian sausage, red onions, fresh garlic, and Boar’s head bacon. And, it makes me proud every time I get to have one.
